Lunch break

Yesterday I was all prepared for TJ's arrival around the lunch hour. Even thought ahead and figured I'd get things ready early incase he had a shorter than usual break. Then today.....We went to MOPS and that threw off my whole morning schedule. It was great, yes. But by the time I got home, and checked my facebook..... Priorities right?!? I totally was not thinking about getting lunch ready for TJ. He came home and said what's for lunch? I was almost taken-a-back. I was not prepared! Yikes....He really did have a short time frame and here I was unprepared. Luckily I have my hamburger already fried up and in the freezer ready to pull out whenever I need to make a meal. So I thought I have a "supposedly" quick new recipe in mind. Only supposed to take 20 minutes. I'll cook it up and you'll have plenty of time to get back to Jury Duty early.
Hence....my new recipe today. It was really easy. Kinda like a home made Hamburger helper. Which is the only kind I will make. I do not care for that boxed stuff. Anywho.... Mexican Pasta Skillet. It would also be a good summertime meal because it doesn't use the stove. Just thinking ahead incase it ever warms up out there. :)

Mexican Pasta Skillet
1 lb hamburger browned and seasoned
1 jar salsa
1 cup tomato sauce
1 1/2 cups water
2 cups elbow macaroni (or whatever, lets face it...noodles are noodles)
1 cup corn
1/2 cup cheddar
Cook beef. Stir in salsa, tomato sauce and water. Heat to a boil. Stir in noodles and corn. Reduce heat and simmer for 12-15 minutes. Sprinkle with cheese and let stand until the cheese melts.

These recipes you have all sound amazing--you can give me great ideas....and it'd be great if you'd just come MAKE them for me, take all the real work out of it ;) lol...

I was just thinking about that today.

To post a picture or not to post a picture that is the question. I'll try to remember next time.
