Today I was looking, still, through cookbooks and highlighting some recipes to try out. I also came across one of my own recipes and it has been awhile since I've made so I decided to make that for lunch today. TJ came home for lunch because he's on Jury Duty and they give them an hour or so for lunch, and since it's just in town he has enough time to come home. So I made taco chicken which is a usual recipe of mine, but for some reason it's slipped under the radar and I haven't made it for awhile. Then since I was looking through the recipes I found a biscuit recipe and thought I should just make that right now. I think I might have enough time to get it done and in the oven before we're ready to eat, and it would go with it decently. Well, it didn't quite go like that. I was ready to put them in the oven, but TJ had already dished everyone up and had the main food set on the table. I said, can we wait 10 minutes until the biscuits are done? He said, I already dished everyone up. It will be cold by then. So I thought, ok we'll just have to eat whenever they are done. They'll be our After-tizers instead. hahahaha. I crack myself up. I just made that up right on the spot!
Anyway.....the recipe is for "Red Lobster" Biscuits. I love the real red lobster biscuits so I thought it would be worth a try. They are good, I think I had a few too many, and there's still plenty left over.
Red Lobster Biscuits
3 cups flour
2 Tbsp baking powder
1 tsp garlic salt
1 stick butter
3/4 cup cheddar
3/4 cup milk
Mix dry ingredients with fingers. Use a pastry cutter to cut in butter until mixture is crumbly. Add enough milk to make dough very soft, not quite sticky. Grab a small handful and squeeze into a ball. Before baking melt 2 Tbsp butter and add 1/2 tsp of garlic salt. Brush on biscuit tops. Bake at 450 for 10-12 minutes. Brush tops one more time with any extra garlic butter mixture. Best served hot from the oven.

I Love the Red Lobster biscuits too. I like alot of stuff at Red Lobster. Just don't go there much cause Mom doesn't really care for it. Some time you and I will have to go Stephanie.

I've made those once or twice but I think the recipe I had used Bisquick. That one sounds pretty good.
