Tonight I made another previous favorite of TJ's. He went back and forth between 9.8 out of 10 and 10 out of 10 and finally ended with 10 out of 10. Yay! ;)
Meatballs and gravy served over mashed potatoes
2 lbs hamburger
2 eggs beaten
6 Tbsp milk
1 1/2 cups soft bread crumbs
1 Tbsp chopped onion
1 can chicken noodle soup
1 can cream of mushroom or chicken
1 1/2 cups water
salt and pepper
potatoes
4 oz cream cheese
6-8 oz sour cream
4 Tbsp butter
Mix hamburger, eggs, milk, bread crumbs, salt & pepper and onion. Shape into meatballs. Brown in a frying pan and do not drain the fat. Add soups and water. Simmer covered for 45 minutes. Mean while, peel, cut and boil potatoes. Mash and mix in half a brick of cream cheese, almost 8 oz of sour cream, and half a stick of butter.
Serve meatballs over top of the potatoes, or on the side. :)
Super yummy. Just takes a little over an hour to make.

Well, shoot Stephanie! I was going to make chili in the slow cooker just now, but I saw your meatballs and potatoes. I have all those ingredients, too- and it looks soooo good. Decisions, decisions.... keep on blogging and have a super week with the fam. Kim
