Chicken Alfredo Lasagna

This is TJ's favorite recipe....along with my Chicken Alfredo Soup.

First off, I make my own Alfredo sauce, and trust me the recipe is not the same with a jar of alfredo. I mentioned my recipe for Alfredo in a previous blog.


Chicken Alfredo Lasagna
Homemade Alfredo Sauce
9 lasagna noodles
1/4 cup milk
1 1/2 tsp oregano
2-3 chicken breasts
1/2 cup red bell pepper
1/4 cup chopped onion
1 garlic clove
3 cups mozz cheese
1 pkg feta cheese
2 cups fresh spinach

In a bowl, combine alfredo sauce, milk and oregano. Whisk until blended and set aside. Chop chicken finely, bell pepper and onion. Mix chicken, pepper, onion, mozz and feta cheese. To assemble lasagna, first pour a little sauce on the bottom of an 8x8 pan, line with 3 uncooked noodles. Cover noodles with spinach, layer 1/3 of the chicken/cheese mixture, and 1/3 of the alfredo mixture. Repeat 2 more times. Cover with Aluminum foil and bake for 45 minutes at 375. Remove foil and bake for 10-15 minutes more until bubbly.



I also made more red lobster biscuits to go along with the lasagna nicely.

I hadn't started this picture thing yet, so here's my picture of the red lobster biscuits.

I'll have to try this recipe sometime. We love alfredo anything.
