Stovetop Hamburger Casserole

Or since we are in Minnesota....the title should read Stovetop Hamburger Hotdish. :)

Contrary to your first thought this does not include stovetop stuffing.....it is just made on the stovetop, so another good recipe to keep in mind during the hot summer months when you don't want to turn on the oven.



7oz small shell pasta
1 1/2 pounds ground beef
1 large onion, chopped
3 medium carrots
1 celery rib, chopped
3 garlic cloves
3 cups cooked red potatoes
1 can whole kernel corn
2 (8oz) cans tomato sauce
1 1/2 tsp salt
1/2 tsp pepper
1 cup shredded cheddar

Cook pasta. In a large skillet, cook beef and onion until no longer pink. Drain any grease. Add the carrot, celery and garlic, cook and stir for 5 minutes or until vegetables are crisp-tender. Stir in the cooked potatoes, corn, tomato sauce, salt and pepper and heat through. Drain pasta and add to skillet, toss to coat. Sprinkle with cheese. Cover and cook until cheese melts.

TJ rated this 6 out of 10, but my sister was dining with us, and gave it an 8 out of 10....she said TJ is a very tough critic. :) I think I would give it an 8 out of 10 as well. I really liked it.

Helpful hint....I cut up the potatoes and put them in a bowl of water, and put it in the microwave for 15 minutes or so, until they slightly softened.



Seems as though a meal isn't complete until you add the cheese! :) Yum. I love cheese.
