Crispy Cheddar Chicken





Crispy Cheddar Chicken

4 large chicken breasts
2 sleeves Ritz crackers
1/4 tsp salt
1/8 tsp pepper
1/2 cup milk
3 cups cheddar cheese
1 tsp dried parsley

Cut chicken breasts into large chunks.  Grind up the ritz crackers.  Put the milk, cheese and crackers into three separate bowls or pans.  Toss the salt and pepper into the cracker crumbs and stir it around.  Dip each piece of chicken into the milk first, then the cheddar and the the cracker crumbs.

Cover the pan and bake at 400 for 35 minutes.

Broccoli Cheddar Soup




Broccoli Cheddar Soup
1 bunch broccoli
1/4 cup butter
1/2 cup chopped onion
3 Tbsp flour
2 cups chicken broth
1 cup broccoli water
2 cups half and half
1/2 tsp worcestershire sauce
1/2 tsp salt
2 cups cheddar


Chop broccoli and toss in a sauce pan.  Cover with water and boil until tender.  Drain one cup of the broccoli juice in a measuring cup and set aside.   Mash up the broccoli with a potato masher.  While the broccoli is cooking melt butter in another larger pot.  Add onions and cook until they are translucent.  Add flour and whisk around.  Pour in chicken broth.  Bring to a boil and add the reserved broccoli water, half and half, worcestershire sauce, and salt.  Stir until soup becomes slightly thick.  Add broccoli and the cheese.  Dont let the cheese cook in the soup.  Just let it get heated through to melt.

Creamy Chicken Alfredo Pasta Bake

This is so simple, and yummy!



Homemade Alfredo Sauce
2 cups heavy whipping cream
4 Tbsp butter
1/2 cup parmesan

Chicken Alfredo Pasta Bake
8 oz penne
1/2 cup chicken broth
1/4 tsp oregano
1/2 tsp thyme
3-4 chicken breasts, cooked and chopped
2 cups mozz. cheese

Make Alfredo sauce.  Melt butter, add whipping cream, slowly add the parmesan and stir occasionally until well blended.  Let simmer. Meanwhile, Cook noodles and drain. Also, Cook chicken and chop.
When chicken is done add with seasonings and chicken broth to the alfredo sauce and let the chicken warm through.  Keep your noodles warm.  Line your 8x8 pan with the cooked noodles.  Pour the sauce/chicken mixture over the noodles.  Top with mozzarella.  Turn the oven on broil, and put in your dish.  Cook only 5-6 minutes until the cheese is bubbly and golden.
Serve immediately.

Randomness v42

Me- (singing) Lady in Red.....
Monkey- (doesn't know the song but tries singing along)- Lady in blue, lady in all different colors like you.

Monkey- It should be womanners to you and manners to me.


WOMANners, MANners.....get it?  I thought that was pretty interesting for him. :)

Bear- I remember the cartoons I watch and then I refresh my brain and I can watch it again inside my head.

Monkey-If I were a human cat I'd jump out the window.

4 year old niece- What time it is?
(Looks at my watch) Oh, 49:10:11

Kids were playing in the mud.  I told monkey I'd give him a reward if he cleaned the mud off his brothers shoes.  He went out to do it and said to me, I don't want a reward from you.  I'll just wait to get my reward in Heaven instead.

Bear- 7
Me- no that's a week.
Monkey- 30
Me- no that's a month.
Monkey- OH! 31!
(Oh dear)

Me- As long as we go in and get it done.
Monkey- You mean no dilly-daggin'
Me- it's dilly-dallying.

Monkey- Buenos Dias.
Me- Close, Buenos Aires

Me- when the k is next to the n it doesn't say anything, it's called a silent letter.
Bear- WELL then WHY do they even put it there? Just leave it off!!!
