Orange Chicken (GFDF)
Orange Chicken
Marinade & Sauce:
3/4 cup chicken broth
3/4 cup orange juice
1 1/2 tsp orange zest
6 Tbsp vinegar
1/4 cup soy sauce (gluten free)
1/2 cup brown sugar
3 garlic cloves
1 Tbsp ginger
1/3 tsp cayenne pepper
3-4 boneless chicken breasts
1/4 cup cornstarch
2 Tbsp cold water
Coating & Frying
3 large egg white
1 cup cornstarch
1/2 tsp baking soda
1/4 tsp cayenne pepper (optional)
2 cups oil
Combine the chicken broth, orange juice, orange zest, vinegar, soy sauce, brown sugar, garlic, ginger and cayenne pepper in a large saucepan. Whisk all to blend. Measure out 3/4 cup of the mixture and transfer it to a large ziploc baggie. Add the cut up chicken cubes to the bag, and refrigerate for 30-60 minutes. While you prepare the rest.
Place the saucepan with the remaining mixture on the stove and heat over medium-high heat. Bring to a simmer. In a small bowl, whisk together the corn starch and water until smooth. Add the mixture to the sauce pan. Continue simmering until the sauce is thick.
To prepare the coating, place the egg white in a shallow dish and whisk until frothy. In a second dish combine the cornstarch, baking soda and cayenne pepper (if using). Whisk to blend. Drain the chicken of the marinade and pat dry with paper towels. Place the chicken in the egg white to coat, then the cornstarch and drop into the pan of hot oil. Fry for 5 minutes turning chicken halfway through cooking. Transfer the chicken to a paper towel lined dish to drain and excess oil. When done with all chicken, remove the paper towel, then mix the sauce mixture over the chicken. Serve with rice.

Crisp & Chewy Chocolate Cookies (Flourless)
This have an interesting texture. Crisp and crunchy on the outside layer and chewy and gooey in the middle.
Crisp & Chewy Chocolate Cookies (Flourless)
2 1/2 cups powdered sugar
1/2 cup cocoa
1/4 tsp cinnamon
1/4 tsp salt
3 egg whites
1 tsp vanilla
1 or 2 cups chocolate chips
Preheat your oven to 350. Mix together the powdered sugar, cocoa powder, cinnamon and salt. Beat in the egg white until well combined, add vanilla, then fold in the chocolate chips.
Scoop about 2 teaspoons worth, 2 inches apart on the pan and bake for 13-15 minutes. Until the surface is cracked. Allow to cool completely before removing from the trays with a spatula. They do stick pretty well to the pan, so they need to really be wiggled free.

Tacos (GFDF)
Tacos
Who knew tacos could still be good without the cheese.
We get these La Tiara Taco Shells from Hy-Vee. They are a little smaller but they are good and gluten free. :)
Taco Shells
lettuce
cucumber
salsa
1 lb Hamburger
2 Tbsp taco seasoning (homemade)
black olives
onion
Fry up your hamburger, add 2 Tbsp taco seasoning and 1/2 cup water. Warm up your taco shells in the oven. Chop your lettuce, slice the olives, cut up the onion and peel and slice the cucumber.
Next fill your taco shell with your favorite toppings.
I put my lettuce and salsa on the bottom, then slices cucumbers, then topped with meat last. The flavors blended better that way and there was meat in every bite instead of having it only at the bottom. And that cucumber in there really popped all the flavors together. I did not even miss the cheese! Yumm...we are having tacos every week! :)

Simple Almond Flour Bread
2 1/2 cups almond flour
1/2 tsp kosher salt
1/2 tsp baking soda
3 eggs
1 Tbsp agave nectar
1/2 tsp apple cider vinegar
In a large bowl, combine almond flour, salt and baking soda.
In a medium bowl, whish the eggs, then add the agave and vinegar.
Stir the wet ingredients into the dry. Scoop batter into a well greased loaf pan. 6x4 size.
Bake at 300 for 45-55 minutes on bottom rack of your oven. Cook until a knife comes out clean. Cool and serve.
(I only had a regular loaf pan size 9x5....so mine was long and thin. I just sliced the bread down the middle and then cut it the opposite way to make longer slices instead of short skinny slices.)
I wouldn't say this was the best bread for sandwiches, but it was good for breakfast and it was always moist. Add some jelly and it's a good snack, or side for breakfast.

Fruity Chicken Stir-Fry (GFDF)
Fruity Chicken Stir-Fry
3 chicken breasts
1/2 cup green pepper
1/2 cup red pepper
1 can pineapple tidbits
3/4 cup pineapple juice (from can)
1/2 cup orange juice
3/4 cup mayo
1 can mandarin oranges
2 cup rice
3 cloves garlic
salt & pepper to taste
Cube and cook chicken with salt and pepper and garlic. Add the green and red pepper and saute for a few minutes. Mix the pineapple juice, orange juice and mayo together in a bowl. Add the rice and juice mixture to the pan, stir together. Toss in the pineapple and mandarin oranges. Stir in and let simmer for 10 minutes. Stirring occasionally to keep the rice from sticking to bottom of the pan.
*We don't put in the mandarin oranges....they are not my husbands favorite.

Almond Flour Brownies
I will say these left a little something to be desired for me. But once again the kids loved them! I think the something to be desired is sugar.... :) My sweet tooth just isn't playing along. I'll find something yet to satisfy it. You wait and see.
Almond Flour Brownies

2 tsp vanilla

1/3 cup dairy free chocolate chips (optional)
Prehat oven to 325. Grease an 8x8 pan. Add the almond flour, soda, salt and cocoa powder to a bowl and mix until well blended. Add the eggs, almond butter, honey and coconut oil. Blend until well mixed. Stir in the chocolate chips, if desired.
Pour batter into the pan. It will be thick. Bake 20-25 minutes. Until a toothpick comes out clean.

These were not my favorite, but my son said they are his favorite cookie I've made so far. So that must say something.

Coca-Cola Pork Chops
6-8 Pork Chops
1 cup ketchup
1 cup coca-cola
salt and pepper to taste
brown sugar for topping
Mix together the ketchup and coca-cola. Line the porkchops in a 9x13 pan. Pour over the sauce mixture. Sprinkle a little brown sugar on each pork chop. Bake at 375 for 50-60 minutes.
*Next time I think I'm going to let them marinade all day before I bake them to help get the flavor through even more.

Crockpot Meatloaf
Gluten Free & Dairy Free Meatloaf. But it gets even better. You can cook it in the crockpot and make life even easier. :)
Crockpot Meatloaf
2 lbs ground hamburger
1 cup crushed potato chips*
1/4 cup ketchup
1 tsp mustard
1 egg
1/2 cup chopped onion
1/4 cup brown sugar
1 tsp Italian seasoning
salt & pepper to taste
Crush potato chips. Thaw meat. Mix everything together in a bowl. Then place in a crockpot. Cook on high for 3-4 hours. Or on low for 5-7 hours.
(Or put in a loafpan and cook in the oven at 375 for 50-60 minutes.)
* Make sure you are using gluten free chips. I use the baked lays, natural chips.
We ate this with the Almond Flour Biscuits.

Double Chocolate Cookies (Flourless)
I suppose my version has a different flavor than the original recipe since I used peanut butter instead of almond butter. It's what I had on hand, and it's cheaper. :)
Double Chocolate Cookies
(Flourless cookies)
1 cup peanut butter *
1/2 cup cocoa powder
1/2 cup honey *
1 egg
1/2 tsp salt
1/2 tsp baking soda
2 tsp vanilla
1/2 cup chocolate chips (dairy free)
Mix everything together and drop on pan. Bake at 350 for 8-10 minutes. Let cool 10 minutes on pan before removing.
When retyping this, I realized I forgot the vanilla. Still tasted fine to me. But I'll probably remember to add it next time.
*She used almond butter, I used peanut butter instead. It says honey, I used agave nectar, just because I had it on hand.

Chicken Salad, Salad
Well, here's a little twist. While bread was in my past I may have enjoyed this recipe on a croissant. Tonight I turned it into a lettuce salad topped with chicken salad. And it was SUPERB! Love it!
2 chicken breasts cubed
3/4 cup mayo
1 Tbsp minced garlic
1 tsp mustard
black pepper
1/4 tsp celery salt
1 Tbsp vinegar
1 tsp sugar, dissolved in vinegar
1 Tbsp minced onion
red grapes cut in halves
lettuce
Cook the cubed chicken with minced garlic and minced onion. When it's cooked through finely chop the chicken. In a bowl, mix the mayo, mustard, pepper, celery salt, vinegar/sugar mixture. Cut the grapes in half and set aside. When the chicken is ready add to the mayo mixture. Put in the frig or freezer to cool the chicken. When it's ready to serve stir in the grapes last. Chop up your lettuce and top with as little or as much chicken salad mixture as you desire!

Mexican Chicken Soup
1 tsp coconut oil (or butter)
1 onion, chopped
4 celery sticks, chopped
3 large carrots, chopped
4 garlic cloves
1 jalepeno, chopped without the seeds
2 1/2 cups water
1 (28 oz) can tomatoes
1 tsp cumin
salt & pepper to taste
1/4 cup chopped cilantro
1 lb chicken breasts, cubed
Melt the coconut oil in a large pan over medium heat. Saute the onions, celery and carrots about 10 minutes. Add the garlic and cubed chicken and saute another 5 minutes, or until the chicken is cooked through. Add the water, diced tomatoes with juice, jalapenos, cumin, salt and pepper and chopped cilantro and bring to a boil. Once boiling, reduce the temp and allow it to simmer for 20-25 minutes more.
*She used a hand held blender to mix everything together. I wanted to keep it more like a chunky soup instead of a puree. So I did not do that.

5 Spice Chicken
This was ok. I might change up the spice mixture next time. Or maybe even just use regular chicken breasts instead.
5 Spice Chicken
1 Pkg. Fresh Chicken Legs
5 spice mix* (See notes)
salt and pepper to taste
1 onion
2 Tbsp apple cider vinegar
2 Tbsp olive oil
1/4 cup water
2 Tbsp honey
Preheat oven to 375.
Place chicken in the skillet. Season with salt and pepper. Sear the chicken. Sprinkle on your "5 spice" mixture. Turn the chicken after 5-6 minutes. Cook for another 3-5 minutes. Mix toghether the vinegar, oil, water and honey. Add to the skillet. Add onions and then put the lid on the skillet and cook on medium-low for 8 more minutes. Transfer the chicken and onion mixture to a baking dish, and bake at 375 for 10-15 more minutes. Afterwards turn the chicken over and broil for another 5-7 minutes to crisp it up.
*This is the mixture I used for the 5 spices.... You're supposed to use these spices, but pick how much you want to use of each one.

paprika 1/2 tsp
garlic powder 3/4 tsp

Peanut Butter Chocolate Chip Blondies
I might say the first flourless peanut butter cookies I made were better than these. But still worth a try!
Peanut Butter Chocolate Chip Blondies. (Flourless)
1 cup peanut butter
1/3 cup honey
1 egg
1/2 tsp baking soda
1/4 tsp salt
1/2 cup chocolate chips (dairy free)
Mix all the ingredients together. Stir in the chocolate chips last.
Bake all together as blondies in a greased 8x8 pan for 20 minutes or until golden brown on top. Or scoop them out individually and make cookies with the same recipe. Cook those for 8-10 minutes.

Anything goes good with bacon right? Well this recipe certainly does!

Baked Bacon Chicken
4 chicken breasts
1 pkg bacon
1 onion, sliced
1/2 cup chopped red pepper
4 garlic cloves
salt and pepper to taste
Cut the chicken into halves or thirds. Fry the bacon in a pan on the stove. Remove the bacon to cool on a plate. Leave some bacon drippings in the pan. Cook the chicken for 4 minutes on each side in the bacon drippings. Remove from the pan and place in a 9x9 baking dish. Fry the onions, garlic and red pepper in the remaining bacon drippings. (Or wipe clean and use a little oil) Break up the bacon into smaller pieces and put over top of the chicken. Next pour the onion, pepper, garlic mixture over top the bacon and chicken evenly. Bake in the oven at 350 for 20-25 minutes more to make sure the chicken is completely done.
*She says to use 6 pieces of bacon, I used the whole package. She says to just a little onion and pepper, when I make it again I would use a whole onion and make the slices bigger instead of finely chopped onion like I used.
