Chicken Tortilla Soup




Chicken Tortilla Soup

1 small onion, chopped
3 garlic cloves, minced
1 Tbsp olive oil
2 tsp chili powder
1/2 tsp cumin
1 tsp oregano
1 jar black bean and corn salsa
1 cup gluten free chicken broth
1 1/4 cups water
1 cup frozen whole kernel corn
1 small can chopped green chilies (optional)
1/4 cup chopped cilantro
2 boneless chicken breasts, cooked and shredded

In a med stock pot over medium heat, saute the onion and garlic in oil.  Stir in chili powder, oregano, cumin, salsa, broth and water.  Bring to a boil and simmer for 5-10 minutes.  Stir in corn, chilies,beans, cilantro and chicken.  Simmer for 10 minutes.  Ladle into bowls and garnish with any extras you wish.  Then eat with corn chips.
