Southwest Chicken Skillet

I would have posted this last night but I was too engrossed in sorting stamps for 5 or 6 hours! :)

Last night's supper was rated a 7 out of 10. I think. Something like that. Maybe even 8....we all liked it. That I remember. :)


2-3 chicken breasts
1 Tbsp olive oil
1 15oz jar of salsa
3/4 cup chicken broth
1/2 cup sweet green pepper
1/4 cup sliced olives
1 cup minute rice
1/2 cup cheddar cheese

Cook cubed chicken in oil until no longer pink. Stir in salsa, chicken broth, chopped sweet pepper and olives (if desired). Bring to boiling. Stir in rice. Remove from heat. Sprinkle with cheese. Cover and let stand about 5 mintues or until rice is tender.


I didn't have sweet green pepper. In fact I was trying to find it for a different recipe. What's the difference between regular green peppers and where can you find it in the grocery store?

Stephanie - the green bell peppers in the store are sweet peppers. Anytime a recipe says a sweet pepper it's the bell peppers - green, yellow, red, orange - the green is the least sweet of all
