Lunch Guest

I love having people over for lunch, or just in general. Today we had an excellent guest for lunch and us adults watched a movie while the kids took a nap! :)
And along with our lunch, I made dessert. Apple crisp. MMMM...I don't remember the last time I made it but I need to do it sooner next time. It was very, very good!



I forgot to take a picture before we ate so I had to take a picture of the leftovers.

Sweet & Sour Chicken Stir-Fry
2 1/2 cups minute rice
1/3 cup ketchup
3 Tbsp soy sauce
2 Tbsp brown sugar
1 Tbsp vinegar
4 tsp corn starch
1 can pineapple chunks and juice
8 oz frozen peapods
2 tsp veg oil
2 garlic cloves
2-3 chicken breasts

In a small bowl, combine ketchup, soy sauce, brown sugar, vinegar and corn starch. Whisk until blended. Drain pineapple, reserving the juice. Measure 1/2 cup of juice and add to the ketchup mixture. Cook chicken and chop. Remove from pan. Heat olk and add pea pods and garlic. Stir-fry until pea pods are heated through. Add ketchup mixture and bring to a boil. Cook and stir 1 minute until thickened. Add pineapple and chicken to pan. Toss to heat thoroughly. Serve over rice. For rice....bring 2 1/2 cups of water to a boil. Remove from heat, pour in 2 1/2 cups of rice and cover. Let stand 10 minutes and rice will be nice and soft. You can make as little or as much rice as you want, incase you didn't know you just use the same amount of rice and water.

Then even though this was a good meal, the best part was the dessert.



Apple crisp
6 cups sliced apples
1 tsp cinnamon
1 tsp lemon juice
1/4 cup sugar
topping:
1 1/2 cups oatmeal
3/4 cup flour
1/2 cup butter, melted
3/4 cup brown sugar

cut apples, mix in sugar, cinnamon and lemon juice. Spread over the bottom of a 9x13 pan. Mix the topping ingredients together and top the apple layer. Bake at 375 for 20-25 minutes.
