Chocolate Cream Cheese Cupcakes


These are a home made treat. I got the recipe from a friend a long time ago. They are so good because they are moist, and the cream cheese on top is the best part of it. Sometimes I throw some extra chocolate chips inside the cupcakes too. In this batch I put chocolate chips in the last 12 and not the first 12. This can actually make like 40 cupcakes if you make them small. I just put a little more batter in each one this time to make them bigger and to have less trips to the oven. TJ wishes I would make them a little smaller though because that means there are more for him to eat. :)

filling:
8 oz cream cheese
1 egg
1/2 cup sugar

batter:
3 cups flour
2 cups sugar
1/2 cup cocoa
2 tsp soda
1 cup oil
2 cups water
2 tsp vinegar
2 tsp vanilla
Mix filling and set aside. For batter, mix the dry ingredients together and add the rest of the ingredients. Pour batter into paper cup liners, 1/2 to 3/4 the way full, then spoon about 1 tbsp of the filling mixture on top of each. Bake at 350 for 20 minutes.
