Mexican Fiesta Platter

This original recipe makes 2 large platters but I will give you the smaller version I made instead.

1 lb hamburger
1 can kidney beans
1 15 oz can tomato sauce
2 tsp chili powder
tortilla chips
1 1/2 cups minute rice (cooked)
1/2 cup onion
1 cup cheddar cheese

Cook beef.  Add beans, chili powder and tomato sauce and simmer for 20-30 minutes, stirring occasionally.  On your plate layer the chips, cooked rice, onion, meat mixture, cheese, lettuce, tomatoes and olives.  Can sprinkle with hot sauce if desired.

I just made them up on individual plates for each of us.  Plus we added sour cream and salsa to top ours off! :)  TJ gave this a 7 out of 10.
