Fruit Pizza

This is the way my mom used to make fruit pizza when I was a kid.  I loved it!  But she would really only make it when we had company coming over.

Crust:
1 sleeve graham crackers
1/2 stick butter

Next layer:
8oz cream cheese
1/2 cup sugar
1 tsp vanilla

Fruit:
strawberries
kiwi
pineapple
grapes
bananas
peaches
(Soft fruit works better)

Glaze:
1 cup water
2 Tbsp lemon juice
2 Tbsp corn starch

First smush up your graham crackers, melt the butter and mix together well.  I then put this in a flat platter of some sort.  Put it in the freezer while you make the next layer.
Soften the cream cheese in the microwave, unless you thought ahead long enough to let it soften on the counter most of the day.  Mix together with sugar and vanilla.  Take the crust out of the freezer and spread over crust.  Top with cut up fruit.  Make the glaze on the stove. Bring to a boil and stir continuously until it thickens up a lot.  Pour over the top of the fruit and spread out a little to make sure it's covering all the fruit.  This keeps the fruit from going bad to quick.  Especially if you are using bananas.


It kinda falls apart easy.  But sure tastes good!

Apparently the color on my phone is a little off cuz when I looked at the picture of the fruit pizza on my facebook the kiwis looked like a puddle of nacho cheese. I knew it wasn't, just appeared that way. Lol!

Haha...they are actually golden kiwis. Got them on accident, but they were super delicious. Just a little more of a goldenish green color instead of a solid green color. :)
