Cheeseburger Soup

I think the rainy chilly weather made me in the mood for soup. It sounded good, so I thought I'd get one more pot of soup in before the weather is too warm for soup again.

We all love this soup. TJ really likes it because it is "hearty". Nice and thick, and chunky and not 'soupy'.


Cheeseburger Soup

1/2 lb hamburger
1/2 cup chopped onion
1 cup shredded carrots
1 tsp basil
1 tsp parsley
4 Tbsp butter
3 cups chicken broth
4 cups cubed potatoes
1/4 cup flour
2 cups cheddar
1 1/2 cups milk
1/4 tsp pepper
1/4 cup sour cream

In a pot, saute onion, carrots, basil and parsley in 1 Tbsp butter, until veggies are tender. Add broth, potatoes and beef and bring to a boil. Reduce heat, cover and simmer 10-12 minutes. In a small pan melt remaining butter. Add flour, cook and stir for 2 minutes. Reduce heat to low and add cheese, milk salt and pepper. Cook and stir until cheese melts. Blend in sour cream and serve!
