This is the third Corn Chowder recipe we've tried. They have all been good I will have to say, but I think I like the Chicken Corn Chowder the super best!
3 Tbsp butter
1 cup chopped onion
4 cups diced potatoes
2 cans cream style corn
2 cups milk
1 tsp salt
1 tsp cumin
1/2 tsp black pepper
1/2 cup cheddar cheese
In a heavy skillet, melt the butter and onion. Cook over low heat until tender. Cook 4 cups of potatoes and add to the onion mixture, stirring in the corn and milk and seasonings. Cook slowly until it steams, stirring often. Just before serving stir in the cheese.
