Pumpkin Chip Muffins
4 eggs
2 cups sugar
1 can pumpkin
1 1/2 cups canola oil
3 cups flour
2 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1 tsp salt
2 cups chocolate chips
Mix together eggs, sugar, pumpkin and oil until smooth. Combine the flour, soda, powder, cinnamon and salt in another bowl. Gradually add to the pumpkin mixture. Fold in the chocolate chips. Fill greased or paper lined muffin pan, three-fourths full. Bake at 400 for 15-18 minutes or until the toothpick comes out clean. Cool in the pan 10 minutes before removing.
I filled my muffin liner 3/4th's full and it made almost 3 dozen. So somewhere around 2-3 dozen depending on how full you fill them.
TJ gives them a 7 out of 10. If you like pumpkin I guess.
