Chicken Tortilla Soup

Tonight's new recipe was Chicken Tortilla soup.  I was a had tried a chicken tortilla soup once at Hickory Park and loved it!  Haven't been able to find anything like it since then.  And have never seen it there again anytime we've gone back to the restaurant.

Well, I was surprised to find this was pretty similar.  Definitely surprising since it was really easy.

2-3 chicken breasts
1 can cr of chick soup
1 can cr of mush soup
2 cans milk
1 1/2 cups cheddar cheese
1 can enchillada sauce
1 jar salsa
Tortilla Chips

Cook and shred or finely chop chicken.  Mix everything else together in a pot, or in the crockpot.  Let simmer until you are ready to eat.   Enjoy with tortilla chips.

(It actually said to use 1 can of nacho cheese soup, but I used cheddar cheese instead)
Like I've said before....there's almost always one thing I change in a recipe. :)

We really enjoyed it.  TJ gave it an 8 out of 10.
