Lemon Pasta with Chicken


 Lemon Pasta with Chicken

1pkg penne pasta
2-4 boneless skinless chicken breasts
Salt and pepper
Lemon Pepper seasoning
3 cloves garlic
1/4 teaspoon red pepper flakes
3 tbsp olive oil
3 tbsp fresh parsley, roughly chopped
2 lemons
1/2 cup grated Parmesan

Season the chicken with lemon pepper, and bake in the oven at 425 for 35 minutes or until middle comes out to 170 degrees.

Cook pasta, then drain.  Mix together the juice from 1 lemon and parsley. Mix well. Set aside.  When chicken breasts come out of oven, heat olive oil over medium-high heat. Add garlic and red pepper flakes. Saute until fragrant and slightly browned, 2 minutes.  Add cooked pasta and mix thoroughly with garlic-oil mixture. Turn off heat and transfer to bowl containing lemon-parsley. Add salt and pepper to taste.  Slice chicken and place on top of your pasta with parmesan.




**I thought this was going to be a great recipe, because there is another recipe with the lemon pepper seasoning that I super duper love!  But this was an absolute flop for us.  Good luck if you choose to try this recipe for yourself.  Word to the wise, too much of the seasoning on the chicken is overbearing....so either go light, or change it to putting that seasoning in with the pasta and leaving the chicken plain.  Then add some lemon juice to the chicken, and that might blend all the flavors together better.  Let me know if you try this and get a better result than us!
