Double Chocolate Cookies
Double Chocolate Cookies
1 cup butter (no substitutes REAL BUTTER ONLY), softened
2 cups sugar
2 eggs
1 cup baking cocoa*
2 tsp vanilla
2 cups flour
1 tsp baking soda
1/4 tsp cinnamon
1 cup semisweet chocolate chips
In a mixing bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Beat in chocolate and vanilla. Combine the flour, baking soda, salt and cinnamon; gradually add to the creamed mixture. Stir in chocolate chips. Scoop onto pan and bake at 375 for 10-12 minutes. Or until tops are cracked. Remove to wire racks to cool. Yields 3-4 dozen.
*The real recipe calls for 4 (1oz) squares of unsweetened chocolate, melted and cooled.
1 oz of unsweetened chocolate squares is the same as 1/4 cup of baking cocoa. I always sub out cocoa instead of unsweetened chocolate squares.
