Homemade Brownies (GFDF)




I've tried a couple different brownie mixes, or homemade versions with gluten and dairy free.

Recenly I've been on a kick of the Betty Crocker, all purpose gluten free flour mix.  And with this original recipe, it was a hit in the gluten and dairy free category.

Enjoy them for yourself.  I think I've eaten 1/3 of the pan so far.  Shhhhh, don't tell the kids.


1/2 cup cocoa
1 cup shortening (or other butter substitute)
4 eggs, well beaten
1 cup brown sugar
1 cup white sugar
1 tsp vanilla
1 cup (Betty Crockers, all purpose gluten free flour mix)*
1/2 tsp xanthum gum
1 tsp baking powder
1/4 cup chocolate chips (optional)

Beat the cocoa and softened shortening.  Add eggs, and sugars and vanilla.  Mix well.  Blend in the flour, xanthum gum, and baking powder.  Mix well.  Pour into a 9x13 pan.  Sprinkle some chocolate chips on top, if desired.  Bake at 350 for 40 minutes.
