Homemade Brownies (GFDF)
I've tried a couple different brownie mixes, or homemade versions with gluten and dairy free.
Recenly I've been on a kick of the Betty Crocker, all purpose gluten free flour mix. And with this original recipe, it was a hit in the gluten and dairy free category.
Enjoy them for yourself. I think I've eaten 1/3 of the pan so far. Shhhhh, don't tell the kids.
1/2 cup cocoa
1 cup shortening (or other butter substitute)
4 eggs, well beaten
1 cup brown sugar
1 cup white sugar
1 tsp vanilla
1 cup (Betty Crockers, all purpose gluten free flour mix)*
1/2 tsp xanthum gum
1 tsp baking powder
1/4 cup chocolate chips (optional)
Beat the cocoa and softened shortening. Add eggs, and sugars and vanilla. Mix well. Blend in the flour, xanthum gum, and baking powder. Mix well. Pour into a 9x13 pan. Sprinkle some chocolate chips on top, if desired. Bake at 350 for 40 minutes.

Mashed Potatoes (GFDF)
Mashed Potatoes
6-8 medium potatoes, peeled
1 cup original almond milk
1 Tbsp coconut oil
salt & pepper
garlic cloves
Peel and boil the potatoes with the pressed garlic cloves, until potatoes are tender, drain water. Mash with milk and coconut oil. Sprinkle in salt and pepper to your liking.

Randomness v47
1. Bear (during play time)- "Then, the fortune said that the giant was a peacock"
(not sure what they were playing, but their conversation is interesting sometimes)
2. Bear- "I saw a piece of chicken almost as big as my face, but bigger"
3. Girl- "Grandpa told me that last night."
Daddy- "He did? You talked to grandpa?"
Girl- "No"
4. Me- Let's learn this little rhyme.
Secrets, Secrets are no fun
Secrets, Secrets hurt someone
Bear- Secrets, Secrets are no fun
Secrets, Secrets hurt one son.
5. Bear- looking at the Christmas presents under the tree.... "To mom, from Stephanie, What?!? How can that be possible?"
6. Girl- "No prob-len-tay"
7. Monkey- "If the (foster) baby wrestled a chipmunk who do you think would win?"
8. Monkey- "It's like Bear has leprosy on his fingernails because they just fall off."
9. Bear- "They should call it eleventeen and twelveteen. Hey, eleventeen actually sounds good!"
10. 7 yr old girl- "I remember Chick-Fil-A! It was the best pizza I ever had."

Cashew Chicken Stir-Fry
I never knew how good cashews were until the other day. I decided to make this and actually put the cashews in it. So I was cooking the chicken and popped a cashew in my mouth. Then I discovered that I really liked them, and almost ate too many that we couldn't use them in the recipe. Never fear, there were plenty left, and they made it into the recipe just fine.
Cashew Chicken Stir-Fry
2 cups chicken broth
2 tbsp corn starch
3 Tbsp soy sauce
1/2 tsp ground ginger
1 lb chicken breasts cut into strips
1 Tbsp coconut oil
2 garlic cloves
1/2 cup chopped carrots
1/2 cup sliced celery
1/2 bag frozen broccoli
1 small bag frozen pea pods
1 1/2 cups cashews
Cook chicken in 2 Tbsp of the chicken broth. Use the remainder of the broth and add the soy sauce, ginger and corn starch. Set aside. When chicken is done set aside in a bowl. In the same skillet, drop your coconut oil, and saute the minced garlic, carrots, celery, broccoli and pea pods. When they are tender, stir back in the chicken and add the sauce mixture. Bring to a boil, then simmer for 5-10 minutes or until the sauce thickens. Serve over hot rice.

Randomness v46
1. Isaiah- "It's not stupid unless it's something good. Like a cheese cutter."
(I have no idea what he meant by that, but I was cutting the cheese with a cheese cutter at the time.)
2. Me- "Let's not jump the gun here"
Monkey- "I can't jump a gun."
3. Monkey- "Yes Mom, you could buy that, you have $100."
Me- "Yeah, we don't really broadcast those things"
Monkey- "Oh, yeah thats right you only have $10."
(nice save)
4. Foster girl- "Guess how? Pie Cow!"
(mixed up the saying, supposed to be guess why, cow pie.)
5. Grandma- "Monkey, what position do you play in football?"
Monkey- "offense and defense"
Grandma- "Well, that covers it all"
6. Bear- "If I could be an animal, I'd be a mountain goat."
7. Monkey- "Maybe once I eat I'll get my appetite back."

Writing Fractions
Do you have a special needs child? Maybe you can understand some of those easy things that you have to do again and again because your child just can't get it right.
My son is really smart when it comes to math. Not when it comes to spelling. So no matter how many times we work on spelling the numbers he has a hard time.
I try to make extra worksheets that he can use to practice the spellings without feeling like he is working on spelling. Here's one of them.

Chocolate Chip Cookies (GFDF)
I bought some all purpose (gluten free) flour blend. It's from betty crocker. I decided to see how it would hold up with my 'regular' cookie recipe. And by regular I mean the cookie recipe I used to always make before we were eating gluten and dairy free in the house.
I learned from my sister before experimenting with this that when you use any all purpose gluten free flour mixture you need to add a little xanthum gum to help hold it together. The package of xanthum gum tells you how much to use depending on how much flour you're using and what kind of baked good you are making.
The cookies turned out great! Here's what I did.
1 1/2 cups brown sugar
3/4 cup crisco (or other butter substitute)
1 Tbsp vanilla
1 egg
2 cups (betty crocker) all purpose gluten free flour mixture
1/2 tsp xanthum gum
1 tsp baking soda
chocolate chips
Mix together the brown sugar, crisco, egg and vanilla until well blended. In another bowl combine the flour mixture, xanthum gum and baking soda. Mix these two together until combined. Add chocolate chips last. Bake at 350 for 12-15 minutes.
I noticed these needed to cook just a little longer than the original recipe So check them anytime in the 12-15 minute range to make sure they are how you like your cookies.

Multi-Bean Hotdish (GFDF)
When I was growing up, there were always 4-5 crockpots with this dish in them at the potlucks at church. I LOVED it. Not sure what my facination is with it. Besides that it's good. :)
You could throw this in the crockpot to warm it up all day, or throw it together in a pot on the stove and simmer until it's all heated through.
You pick.
1 can Pork and Beans (don't drain)
1 can Kidney Beans
1 can Garbonzo Beans (also known as Chickpeas)
1 can Lima Beans
1 can Large Butter Beans
1 can Navy Beans
1 lb hamburger
bacon pieces
1/2 cup ketchup
1/2 cup brown sugar
1 Tbsp mustard
salt and pepper
Don't drain the Pork and beans, but take out the fatty pork part. Drain all the other beans. Cook and crumble bacon or use the bag of real crumbled bacon bits. Mix everything together and warm through.

Homemade Crunch Bar
I made my own candy bar. Not really that much thinking to it, so check it out and try it for yourself.
Homemade Crunch Bar
Semi-Sweet Chocolate Chips (gluten & dairy free)
crisy rice cereal (gluten & dairy free)
Line a small dish with tin foil. Pour some crisy rice cereal over the bottom of the dish. Melt the chocolate and pour over the rice crispies. You will need to stir and flatten a little. Let it harden, or put in the frig for faster results. Take out of the dish, remove tinfoil for easy clean up and enjoy your candy bar!

Quick Chicken Broccoli
Quick Chicken Broccoli
2 chicken breasts, cubed
1 1/2 cups frozen broccoli
2 1/2 cups chicken broth
2 cups minute rice
onion powder
salt & pepper
Cube the chicken breasts and cook in a skillet with 1/2 cup of chicken broth and seasonings to your likening until chicken is cooked through. Add the rice, 2 cups of chicken broth and broccoli. Stir together then simmer for 10 minutes.
Quick and easy, just like that!
