Homemade Chocolate Pudding
(Dairy Free)
1/2 cup sugar
2 Tbsp cornstarch
1/8 tsp salt
1/3 cup cocoa powder
2 cups almond milk
2 egg yolks
2 Tbsp coconut oil
2 tsp vanilla
Mix sugar, cornstarch, salt, almond milk and egg yolks. Cook in a sauce pan until thick. Add melted coconut oil and vanilla and stir in well. Let cool before serving.

Green Beans
Do you ever want something quick and easy to do just to change up the regular veggie side dish?
Well check out these quick and easy, flavorful green beans!
1 bag frozen whole green beans
real bacon bits
garlic
olive oil
Cook the green beans in oil over medium heat in a saucepan. Add the pressed garlic and bacon. Cook until heated through and serve hot!

Spaghetti Pasta Bake - Gluten Free
One of my biggest struggles with the gluten free life is the lack of traditional everyday casserole/hotdish style meals.
So here's one I threw together on my own.
Spaghetti Pasta Bake
1 box penne style noodles (gluten free)
1 jar pasta sauce
1 lb hamburger
pepperoni
green pepper
onion
garlic
Boil the noodles as directed. Fry the hamburger and add fresh pressed garlic cloves. Mix the pasta, finely chopped onion and green pepper in a bowl. When the meat is done cooking, mix it in with the pasta and toss in the pepperoni. Stir it all together. When the noodles are done throw them in the mix and toss. Spread into a 9x13 pan. Bake at 350 for 15-20 minutes. Just to heat everything through.
If you are not dairy free you could add cheese to the top before baking.

Sweet & Sour Turkey Meatballs
I've tried a few different "Sweet and Sour" items and this one wins my favorite homemade sweet and sour sauce by far. I hope you can enjoy it too.
Sweet & Sour Turkey Meatballs
Meatballs:
2 lbs ground turkey
1 small onion
1 small red pepper
3 garlic cloves
2 Tbsp parsley
1/2 tsp ground ginger
salt and pepper to taste
2 eggs
Sauce:
1 cup pineapple juice (from the can)
1/3 cup finely chopped or ground pineapple
1 Tbsp honey
2 Tbsp red wine vinegar
2 garlic cloves
1/2 cup tomato sauce
2 Tbsp tomato paste
Preheat the oven to 400. Place all the meatball ingredients in a bowl or mixing bowl. Blend or toss with your hands to combine. I so prefer using a mixer so I don't have to toss the meat mixture with my hands. :) Scoop the meatballs onto a pan with edges, to hold in the grease, and bake for 20-25 minutes, until meat registers done. While they bake make the sauce. In a medium saucepan, mix sauce ingredients until combined. I used a small food processor to finely blend the pineapple chunks. Heat over medium heat until sauce begins to boil. Turn to medium low and let sauce simmer for 5-10 minutes until it thickens a bit.
Serve cooked meatballs with a side of the dipping sauce.

Stir Fry Peppercorn Beef
1 1/2 lbs top sirloin beef, sliced thinly
1 red pepper
1 green pepper
1 onion
1 1/2 cup pineapple
1 (8oz) can bamboo shoots
1/4 cup coconut aminos
2 Tbsp sesame oil
3 garlic cloves
1 Tbsp whole peppercorn
1 tsp pepper flakes
1 Tbsp coconut oil
Marinate the sliced beef in coconut aminos and sesame oil for 10 minutes while preparing the rest of the ingredients. In a pan over high heat, add the coconut oil and then the marinated beef into the pan and saute until browned. Remove from pan and set aside in a bowl. In the same pan, add the garlic, onions and peppercorns. Saute until fragrent. Add the bell peppers, pineapple and bamboo shoots and pepper flakes. Stir fry 2-3 minutes more. Return the beef into the pan and stir fry everything for an additional 1-2 minutes. Remove from heat and serve.
I'm not sure this was my favorite recipe, however there were a few things I did not do according to these instructions. So it could be that anything I have with sirloin just don't do it for me, or that those minor steps that I skipped in this recipe would have made all the difference.
