I have posted this recipe before.... Here's the link. However, I wanted to figure a different way to cook it instead of in the microwave. Something just doesn't sound right about that. But feel free to use the microwave version at the link above if you wish.
3 garlic cloves
1 small container cherry or grape tomatoes
3 cups cooked penne pasta
1/2 tsp salt and pepper
2 cups cooked diced chicken breasts
basil, oregano and garlic pepper to taste
Cook the noodles and drain setting aside in a large bowl. Saute the cherry tomatoes with garlic until tomatoes are tender. Then mash the tomatoes. Cook and dice the chicken with seasonings.
Toss it all together and serve warm.

Fried Rice with Chicken
Fried Rice with Chicken
1 bag real bacon pieces (or 6 pieces of bacon cooked and crumbled)
1 lb boneless chicken breasts, cubed
2 medium carrots, chopped
2 ribs of celery, chopped
4 eggs
3 cups cooked rice
1/4 cup soy sauce (GF)
1 small onion
In a large skillet saute the chicken cubes with chopped onion, celery and carrots, until chicken is done.
Set aside and keep warm. In same pan scramble the eggs, breaking into small pieces. Stir in the chicken mixture, rice, soy sauce and bacon pieces. Heat through and serve.

Family Pasta (GFDF)
Gluten Free Elbow Noodles
1 small bag of frozen peas, thawed
1 cup chopped carrots
3/4 cup mayo
1 tsp vinegar
1/8 tsp celery salt
pepper
Potato sticks
Cook noodles according to package instructions. Drain with cold water to cool. Mix in the mayo, vinegar, celery salt and pepper. Stir well. Toss in the thawed peas and chopped carrots. Stir together. Serve cold and top individually with potato stick chips.

Mexican Hotdish (GFDF)
Mexican Hotdish
1 lb hamburger
green pepper
taco seasoning
1 1/2 cups minute rice
1 large can diced tomatoes
1 can chili beans or kidney beans
black olives
1/2 cup water
Cook hamburger with green pepper and add taco seasoning. Layer in a dish the rice and tomatoes stirring just a little bit. Add the 1/2 cup of water to the rice. Next layer the beans and taco meat. Top with black olives and bake at 350 for 25-30 minutes.

Mock Baby Ruth Bars (GFDF)
GFDF version of this regular family favorite.
Mock Baby Ruth Bars
2/3 cup peanut butter
4 cups oatmeal
1 cup brown sugar
1/4 cup white syrup
1/4 cup cocnut oil, melted
1 tsp vanilla
Topping:
6 oz chocolate chips
2/3 cup peanut butter
Mix all ingredients together. pat into a 9x13 pan. Bake at 400 for 12 minutes. Watching closely. Melt topping ingredients together and spread on top of bars. Cool to firm the chocolate.

Bacon & Egg Biscuits
This was a quick and easy supper. Well I guess it's a more traditional breakfast food, but we had it at supper time!
Bacon cooked

Almond Flour Biscuit
Cook your bacon. Fry the eggs, trying to keep them as circular as possible. Click the link to see my recipe for almond flour biscuits. Or use your own biscuit recipe.
The biscuits do not raise very much, but the worked for me in the biscuit. Feel free to roll it out thicker though if you want them to be taller biscuits.

Wednesday Brunch.1
My son decided he wanted to have brunch every Wednesday. I thought this was a decent idea. We will see how it goes.
Here's the first meal. They super loved it!
Almond Flour Pancakes with jelly on them.
Scrambled eggs with chopped up turkey sticks and onion.

Randomness v45
1. Me- Wow, you sure gobbled up your chicken. Or maybe I should say you clucked up your chicken. "Ba-doom, ching" ha
2. 6 yr old girl- "I'm going to save up to get an iPot"
3. Monkey- "I want to be a monkey when I grow up"
Me- "yeah, that's not really a possible dream"
4. 6 yr old girl- "This is my 'Teddy-Cat'"
5. 16 yr old nephew- It (Facebook) is like a frig full of leftovers. I keep going back but it's the same old stuff.
6. Monkey- 10 seems older than 9.
7. 6 yr old girl- "when I went to the farm I fed a pig."
Me- was it a baby pig.
girl- no
4 yr old boy- "OH, Was it a Father pig?!"
8. Monkey- "the only part I like about funerals is the cake."
9. Bear- Ouch, I hit my head.
Girl- "Oh, are you ok, Bud?
Bear- Yeah, but could you just call me by my name instead of Bud?"
10. Bear- "This pizza tastes like noodles"

11. Bear- "You can be too big, but you can't be too small."

Lemon Pepper Pasta (GFDF)
Lemon Pepper Pasta
1 box gf noodles (bowties, penne your choice)
lemon pepper seasoning
1 lb sausage
1/2 cup chopped onion
1/4 cup chopped black olives
3 garlic cloves
2 Tbsp olive oil
Boil the pasta. While pasta is cooking brown the sausage with onion and fresh pressed garlic. When the sausage is done, reduce heat add pepperoni and let simmer 2-3 minutes. Use a large bowl, start with the cooked pasta. Add the olive oil and toss to coat. Sprinkle with lemon pepper seasoning. (add according to your taste likening) Stir in sausage mixture and black olives and serve warm.
