This is one of my husbands favorites. But we haven't made it for awhile. I decided to make a gluten and dairy free version of it. Turned out just as good.
Meatballs & Gravy (GFDF)
2 lbs hamburger
2 eggs beaten
2 Tbsp almond milk
3/4 cup oatmeal
1/2 cup chopped onion
salt & pepper
1 cup chicken broth
1 cup almond milk (or homemade cream of mushroom soup)
cornstarch
1 1/2 cups water
Mix together the hambuger, eggs, milk, oats, onion, salt and pepper. Drop into the pan in round balls. Cook and stir until browned all around. Add the broth, milk(or soup), water and cornstarch to thicken it. Simmer stirring occasionally for 20-40 minutes.
Eat over mashed potatoes.
