Baked Potato Bar

When you're running low, but happen to have these spare things laying around....make yourself a Baked Potato Bar for supper!

I usually have more than this when this is actually on the menu.  It wasn't really on the menu this time, but we had a good amount of ingredients so I went with it.

Califlour, broccoli, carrot blend frozen veggies (steamed or cooked in the microwave)
shredded cheddar cheese
butter
sour cream
potatoes
bacon bits*
ham cubes*
canned chili

Poke and wrap each potato with tin foil  Bake at 400 for 1 hour and 20 minutes.  Or until they are soft on the inside.  The bigger they are the longer they take.
Cut open and top with your own personalized toppings!

*I get the "Real Bacon Bits".  These are the best.  It's already cooked bacon cut up for you.  Then, I usually get 1 really thick slice of ham from the deli and then cut it up into cubes.

Calorie Count
*310*  (including the following toppings and amounts)

 110- 5.3 oz potato
 100- 1 Tbsp butter
75- a little less than 1/4 cup cheddar cheese
15- 1/3 cup frozen veggie blend
   10- bacon bits

  1. We went to a wedding last spring that had a mashed potato bar, complete with every topping you could imagine! The potatoes were even served in martini glasses, so fancy!
